About: Nestled amongst the pristine wilderness of Popayan, Finca El Zafiro (The Sapphire) is an absolute gem and has been tended to by Nancy's family for nearly 100 years. Today, the land is managed by Nancy, her husband, Oscar, and their loyal dog, Trotsky. The temperature here remains between 12-28 degrees Celsius year-round, ideal for the slow maturation of coffee cherries and the development of complex flavour compounds. Nancy and Oscar are meticulous in their cultivation and processing of coffee, which shows in the cup! They are genuinely passionate producers, and we love supporting them. El Zafiro is an extraordinary place; the coffees produced here are like nowhere else on earth. We’ve been buying Nancy and Oscar’s Wush Wush since 2017, and this year’s harvest is reminiscent of those first wondrous cups. This lot was processed using an anaerobic washed method, creating a complex and floral flavour profile.
